Healthy Dessert Week 2

Pumpkin Chocolate Chip Pizookie

The recipe is a little bit more complicated this week using more ingredients but it turned out really yummy and quite healthy despite the chocolate chips (dark chocolate is good for health right?)

Serving: 12
Ingredients:
400g white beans or chickpeas
1 cup brown sugar
1/2 tsp baking soda
2 tsp baking powder
1/4 cup pumpkin purée
1/2 tsp salt
2 tsp vanilla extract
1 cup quick oats
1 1/2 tsp cinnamon
3 tbsp vegetable oil
1 cup chocolate chips (dark if you prefer it)

Now come the easy part! Basically, mix all the ingredients (except the chips), blend it with a hand blender or food processor. Mix in chips and pour into a square pan. Bake it at 350 f for 35 minutes and it is ready!
