A date with chocolate.

Despite my busy, lifeless schedule (finals are in three days!! eeekk!), we decided that we deserve a break and attended the once-a-year chocolate festival in Southbank! An hour of visiting became almost three hours of chocolate tasting, hot cocoa drinking and chocolate shopping! There were so many interesting, pretty looking chocolate that I have previously not seen or heard of. We tried some Cayenne chocolate, rose chocolate (which I didnt fancy), earl grey chocolate and so many more! Kamanda and I, the chocoholics were definitely satisfied!

Though none of us are really Jewish, we still decided to make something out of it and celebrated this festival with sweet potato/potato latkes! It was really delish! We also ended our night with light and fruity chardonnay from California!

Healthy Dessert Week 2

Pumpkin Chocolate Chip Pizookie

The recipe is a little bit more complicated this week using more ingredients but it turned out really yummy and quite healthy despite the chocolate chips (dark chocolate is good for health right?)

Serving: 12
Ingredients:
400g white beans or chickpeas
1 cup brown sugar
1/2 tsp baking soda
2 tsp baking powder
1/4 cup pumpkin purée
1/2 tsp salt
2 tsp vanilla extract
1 cup quick oats
1 1/2 tsp cinnamon
3 tbsp vegetable oil
1 cup chocolate chips (dark if you prefer it)

Now come the easy part! Basically, mix all the ingredients (except the chips), blend it with a hand blender or food processor. Mix in chips and pour into a square pan. Bake it at 350 f for 35 minutes and it is ready!

Another successful healthy and yummy dessert, I must say! Good job kamanda for finding such an amazing recipe!

It is finally the time of the year!

A few of us decided to relax and explored around covent garden this evening after class. The entire place was filled with fairy lights and decorated with festival ornaments. As we were strolling down the streets, we were accompanied by merry Christmas music. It felt quite magical and exciting! We then rewarded ourselves with yummy woodfire baked pizza and famous ben’s cookies (If you ever come to London, you need to try Ben’s cookies! It is the best!). That was actually exactly what we needed after a long day in class. Thursdays are my longest days in the week; we start at 9sih in the morning and end at 6 in the evening. That’s a full working day! I am definitely looking forward to the holiday after my finals in two weeks.

Healthy Dessert Week 1

My roommates and I decided to explore healthy dessert recipes and try them out once a week! This week, we attempted to make yummy low fat chocolate brownies. We found an online recipe from yummly.com that did not require any butter or oil (which is amazing)! Instead, we use plain yogurt. Each serving is as low as 150 calories! We definitely had no shame eating the slice of brownie tonight.

Serving size: 9

Ingredients:
1 cup of sugar
10 tbsp plain yogurt (or go greek!)
6 tbsp cocoa powder
2 eggs
1/2 cup of plain flour
1 tsp vanilla extract
1/2 tsp almond extract
tiny little bit of salt

Instructions:
Super simple! Preheat the oven at 165 C. Mix all ingredients together evenly, pour it into a 8×8 baking dish and put it in the oven! Wait 30 minutes patiently (we had some troubles doing so), and done, it is ready!

Thanksgiving is a very American celebration with a lot of food and this year, we have brought it over to our little house in London! We invited a bunch of friends over for dinner and started preparing the house and food in the early afternoon. As the big bird stood in the oven for hours, we took a little break with wine and ‘love actually’ then back to cooking the sides. The night turned out great with yummy food (I personally made zucchini fritters that turned out really delicious), tons of wine and good fun!

To end the day on a good note, I am thankful for the happiness in my life.

Tea Crazy

Amanda and I went crazy over tea this weekend! We each bought four boxes of different teas at Whole Foods. ohh.. I got the little box of antioxidant-packed blueberries at the Borough Market for only 50p. So yum!

I discovered this yummy finnish licorice this weekend and I can’t stop. I like to think that it is healthier than candy to justify my addiction for it! Haha.. It is so good!
